Cheesy Cauliflower Au Gratin Dish (Low Carb)
Simple, delicious, low carb side dish with a kick!
Ingredients
- 4 cups raw cauliflower florets
- 4 Tbsp butter
- 1/3 cup heavy whipping cream
- dash Fair's Best Better Bayou sauce to taste
- Salt & Pepper to taste
- 6 slices pepper jack cheese deli
Instructions
- Pre-heat oven to 375 degrees.
- In a microwave safe dish, combine cauliflower, butter, cream, Better Bayou sauce, salt & pepper and mix thoroughly. Microwave on high for about 25 minutes, or until tender. (If you need to start at 10 minutes, then 10 minutes more until soft adjust your recipe to your microwave's cook temps.) This amount of time (20-25 minutes) softens, sweetens and reduces the cream and butter, creating a thicker sauce.
- Remove from the microwave and mash with fork or potato masher. Taste and season with more salt, pepper and Better Bayou sauce to taste.
- Spread cauliflower mix into an oven safe dish.
- Layer the 6 pieces of pepper jack cheese across the top of the cauliflower. Bake for 10 minutes until cheese is melted and browned. Serve hot!

Jessie's Hashbrowns
Delicious Cheesy Hashbrowns with a Kick.
Ingredients
- 16 oz Shredded Hashbrowns (frozen)
- 1/3 c Diced Green Peppers
- 1/3 c Diced Onion
- 1/2 c Choice of Bacon, Sausage or Chorizo Cook thoroughly and cut up or chop.
- 1 Tbsp Fair's Best Better Bayou Sauce Season to desired taste.
- 1 stick Butter
- 1 c Cheddar Cheese Optional
Instructions
- Heat 1/3 stick of butter in pan and saute green peppers and onions until tender.
- Add choice of cooked meat with the veggie mix and heat thoroughly.
- Heat 1/3 stick of butter in pan and a hash browns on top and cook to desired crispness on bottom.
- Once ready to flip hash browns, pour the Better Bayou Sauce in with Veggie and Meat Mixture, mix all together and continue cooking until desired crispness is reached.
- Add Cheddar Cheese over top, remove from heat, cover to let cheese melt. Ready to eat!
