Cheesy Cauliflower Au Gratin Dish (Low Carb)

Ingredients
  

  • 4 cups raw cauliflower florets
  • 4 Tbsp butter
  • 1/3 cup heavy whipping cream
  • dash Fair's Best Better Bayou sauce to taste
  • Salt & Pepper to taste
  • 6 slices pepper jack cheese deli

Method
 

  1. Pre-heat oven to 375 degrees. 
  2. In a microwave safe dish, combine cauliflower, butter, cream, Better Bayou sauce, salt & pepper and mix thoroughly. Microwave on high for about 25 minutes, or until tender. (If you need to start at 10 minutes, then 10 minutes more until soft adjust your recipe to your microwave's cook temps.) This amount of time (20-25 minutes) softens, sweetens and reduces the cream and butter, creating a thicker sauce.
  3. Remove from the microwave and mash with fork or potato masher. Taste and season with more salt, pepper and Better Bayou sauce to taste.
  4. Spread cauliflower mix into an oven safe dish.
  5. Layer the 6 pieces of pepper jack cheese across the top of the cauliflower. Bake for 10 minutes until cheese is melted and browned. Serve hot!
